**JOB SUMMARY**

Under the supervision of the Sous Chef, this employee will satisfy the needs of our client by ensuring high-quality, cost-effective services. This employee is responsible for food preparation, meal planning, as well as cleanliness and HACCP/food sanitation activities of the kitchen facility.

**REQUIRED QUALIFICATIONS**

* High school diploma or equivalent

* Minimum of two years of experience in high volume food production and supervision

* Current ServSafe certification or the ability to obtain a ServSafe certification

* Able to proficiently speak, read, understand and write English

* Must pass a pre-employment drug screen and physical requirements

* Must meet criminal history and background requirements

**PREFERRED QUALIFICATIONS**

* Previous remote site experience

* Culinary training from an accredited culinary institute or management experience in high volume institutional type operations

**ESSENTIAL FUNCTIONS**

* Assist Sous Chef with food preparation of daily specials, soups and entrees, within high quality presentation guidelines and sanitation guidelines

* Maintain foods at proper temperature while utilizing Hazard Analysis Critical Control Point (HACCP) principles for the provision of safe, healthy, and sanitary food

* Assist in management of food cost by utilizing all food items in an efficient manner in all areas of production

* Work with Sous Chef to ensure that all sanitation guidelines are followed, and the kitchen is in a clean and organized manner

* Ability to work in a constant state of alertness in a safe manner

* Must be able to communicate with guests and staff efficiently and courteously

* Willingness to perform other duties as required

* Willingness to work at various locations as required

**WORKING ENVIRONMENT**

The employee will be required to live and work in a remote and confined workspace for extended periods of time and exposure to work assignments consisting of twelve-hour days and able to workday or night shifts as required. The majority of the work is performed in a remote setting with a wide variety of people in differing functions, personalities and abilities. There may be a lack of immediate access to critical medical services as well as urban community services.

**PHYSICAL DEMANDS**

The employees work requires routine walking, standing, bending and carrying items. Applicant will be required to successfully complete a post-offer pre-hire physical and Functional Capacity Exam.
