Job Summary:

Works in the kitchen offering sanitation support to the culinary team and restaurant service staff; displaying a guest service personality and positive attitude towards helping others in the back of the house areas.

Responsibilities:

Work in a safe manner and abide by OSHA policies and those set forth by the restaurant

  • Put together the dish machine in the correct manner and check soap and sanitizer levels
  • Lay down non-slip mats and rugs in kitchen
  • Check the salt pellet on the water conditioner and maintain the proper level
  • Fill all sanitation buckets for each prep station and fold towels for each station
  • Set out pre-soak bucket for silverware and ramekins
  • Place all clean trash receptacles with liners in all prep areas of kitchen and line
  • Clean and sanitize all kitchen equipment
  • Clean and sanitize all food storage areas, walk-in coolers, freezers and dry storage areas
  • Clean filters and hoods
  • Clean and sanitize loading dock, garbage areas, all garbage containers and all garbage bins from food production and service areas.
  • Remove dirty linen and towels from kitchen area and place in appropriate containers
  • Store all cleaned articles in the correct areas
  • Remove stains from China and cutlery as required.
  • Ensure all access and traffic areas are free and clear of debris
  • Keep all equipment in its proper areas and said areas are to remain clean and organized.
  • Report all accidents and breakages to the kitchen manager or supervisor
  • Report and/or take action on any equipment breakdown or safety issue relevant to your work area.
  • Remove trash, break down boxes and keep kitchen floors debris free.
  • Assists in ordering stewarding supplies
  • Adheres to state and local health and safety regulations.
  • Exhibits flexibility and emotional control when dealing with last-minute changes and special requests.
  • Works closely and maintains a positive working relationship with kitchen staff.
  • Complies with all policies, procedures and standards.
  • Must be able to work holidays and weekends
  • Perform other duties as requested by management
