Job Description
The Cook prepares food for retail, room service, and catering. This position is Centra's front line culinary production staff. This position follows outlined procedures in producing hot and/or cold food items in large quantities. The Cook serves room service customers, prepares food in the cafes, catering, and completes all cold prep tasks. This is an entry level cook position on the Centra culinary team.
Responsibilities
Communicate directly with Nutrition Services management team on any and all issues that may arise during the day.
Ensure cleaning tasks are completed prior to the end of the shift as assigned on the cleaning list.
Cook food items according to menus, printed tickets, production sheets, par levels/tally sheets, using various cooking methods including but not limited to boiling, grilling, sauteing, braising, frying, steaming, poaching, and baking.
Follow outlined recipes and production sheets.
Follow all HAACP and VDH regulations.
Follow garnishing assignments when plating food.
Assemble trays for room service program.
Prepare cold foods as outlined in recipes.
Ensure all food items are labeled and dated.
In retail areas, take customer orders, and prepare according to menu and recipe guidelines.
Weigh and measure all ingredients, ensuring correct measures are used, following recipe guidelines.
Complete taste panels each meal
Record all temperatures on HACCP logs.
Ensure all equipment is used properly, cleaned and inspected, report any operational issues to management.
Stock all areas prior to each meal (MISE-EN-PLACE)
Ensure food is stored properly at all times.
Complete all prep tasks during designated shift and ensure everything is labeled and dated.
Work as a team to serve patients, customers, and guests.
Participate in team building exercises, including training, huddles, and staff meetings.
May perform other duties as assigned or requested, and job specification can be modified or updated at any time.
Qualifications
Required Qualifications:
High School Diploma / GED
Prior cooking experience in restaurant / hospitality environment
SERV safe certification within 90 days of hire.
Preferred Qualifications:
Three years cooking experience.
