**Job Summary**: The cook assumes the responsibility for the preparation of a variety of foods for patients, cafeteria services, and special functions. The cook is also involved in sanitation and kitchen maintenance. Under direct supervision. **Essential Functions:**
* Ability to prepare a variety of cold foods, hot entrees, vegetables and soups for patients, cafeteria and catering services.
* Assumes the responsibility for proper plating, panning, and garnishing of products.
* Is responsible for proper labeling and marking of special diet products.
* Properly stores, labels and dates leftover products.
* Knows basic cooking skills, terminology, and how to convert recipes into different quantities.
* Knows how to read, follow and record information on production sheets.
* Assumes the responsibility for cleaning and sanitizing the equipment used in the production area.
* Levelland:
* Properly stores, labels and dates leftover products and documents cool down temperatures and cafeteria refrigerator temperatures.
* Assumes the responsibility for cleaning and sanitizing the equipment used in the kitchen and cafeteria and documentation of this cleaning as well as documentation of sanitizer effectiveness for the dish machine, pot and pan sink, and rag water.
* Assumes the responsibility for testing the food thermometers daily and documenting their accuracy.
* Ability to operate the cash register and complete the money sheet documentation.
* Properly completes: snack and supplement labels, production, and service of snacks and supplements.
